1 teaspoon dry mustard
1/4 teaspoon dry or freshly grated nutmeg  
3 pounds bone-in chicken drums and thighs
2 spacious handfuls apple wood chips, soaked in water for about 30 minutes

1)  Combine the marinade ingredients and process in a blender or food processor for about one cramped until pulverized. exercise rubber gloves when handling the peppers.
